Living in a van has brought on a lot of life adjustments for me, but a big one has been cooking!
I tend to eat fairly clean on a regular basis (lots of fresh veggies, fruits and proteins) and have loved developing my cooking skills over the last couple of years, but it looks completely different when you’ve got one propane burner and… not much else! Ingredients are also somewhat limited as my fridge is roughly the size of a matchbox.
Despite that, I’ve enjoyed the challenge of keeping my diet (mostly) clean and my meals tasty. In the Kitchen you will find a collection of recipes and meal ideas that I have discovered along the road, as well as some reviews for restaurants, pubs, food trucks, etc.
In this first installment I’ll be sharing the breakfast I’ve been eating this week; Bok Choy Fry Up!
Bok Choy Fry Up
Ingredients
- 2 strips of bacon
- 1 tablespoon minced garlic
- 1 head of baby bok choy
- 2 eggs
- Chili powder
- Salt
- Coconut aminos
- Fry your bacon how you like it. I generally go with 2 strips, but always feel like I need 20 more so follow your heart.
- Remove the bacon from your pan and add your garlic. This is another follow your heart ingredient. I buy the pre-minced garlic because mincing it myself makes me want to stab my own eye out and since I can only store so much, my garlic quantities are somewhat limited. Go ahead, add an extra tablespoon or 3. Stir it around in the bacon grease remaining in the pan and make a little garlic bed for your bok choy.
- Lay your whole head of baby bok choy into the garlic bed. You can cut off the end first if you’d like, but either way, nestle those precious leaves right into your aromatic cradle.
- Crack your eggs into the pan next to the bok choy.
- Sprinkle the whole works with salt and chili powder then drizzle with coconut aminos and let ‘er fry.
- Occasionally turn your head of baby bok choy so it gets an even fry and flip your eggs as you like them. Cook until you’re satisfied,
- Add your bok choy and eggs to the same dish you’ve got your bacon on and then add anything else you’re craving. A usually serve with some sliced avocado.
